Servings: 27cookies
Ingredients
1 ¼cupsgranulated white sugar
1cupbutterI prefer lightly salted
3egg yolksroom temperature
1tsppure vanilla extract
2 ½cupsall-purpose flour
1tspbaking soda
½tspcream of tartar
¼tspsalt
½cupholiday colored jimmies
Instructions
Preheat oven to 350 degrees.
Prepare 3 cookie sheets by lightly coating with nonstick spray or lining with parchment paper.
Cream together butter and sugar for 2-3 minutes until light and fluffy.
Add egg yolks and vanilla, beating slowly. Stir to thoroughly combine.
In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt.
Add flour mixture to wet mixture and stir on low until no white remains.
Stir in jimmies until evenly distributed throughout dough.
Use a scoop or tablespoon to portion dough into 1-ounce balls. These do spread, so I can fit 9 to a half-sheet. Do not flatten the balls, they will spread on their own.
Bake from 11-14 minutes, or whenever the edges start turning lightly brown.
