Caramel Oatmeal No-Bake Cookies

It’s kind of funny to call these “cookies” when they’re really more of a penuche-based fudge with oatmeal in it. But I grew up on a chocolate version with cocoa powder, and they are near and dear to my heart. When I saw the variation using caramel instead of chocolate, I was intrigued.

Penuche is a fudge made with milk, butter, and brown sugar. It’s delicious. These are very similar. Even though you don’t use brown sugar, the caramels give it a similar flavor.

After you add the caramels, it’s going to take a few minutes of patient stirring and squishing to melt all those little balls, but do keep going because you don’t want sticky gobs of unincorporated caramel in these cookies.

After the caramels are dissolved, add the coconut and oatmeal. Stir until the mixture thickens a bit, so that your cookies won’t melt into puddles.

When they’re fresh, they’re going to be wet looking and impossible to pick up. You want to let them cool to room temperature, and ideally, overnight. My family likes these cookies when they have lost their glossiness and are completely matte. They will store for about a week in an airtight container – if they last that long.

Caramel Oatmeal No-Bake Cookies

A quick candy-cookie that comes together in just a few minutes.
Servings: 30 cookies

Ingredients

  • ½ cup butter lightly salted
  • ½ cup milk
  • 1 cup granulated white sugar
  • ½ tsp salt
  • 1 tsp pure vanilla extract
  • 1 bag Kraft caramel baking bits 11 oz
  • 3 cups quick-cooking oats
  • 1 cup flaked coconut

Instructions

  • In a heavy saucepan, melt butter and sugar together.
  • When melted, add sugar and salt, and stir to dissolve over medium heat.
  • Bring mixture to a rolling boil. Once the mixture is at a rolling boil, set a timer for 90 seconds, boiling without stirring.
  • Remove from heat. Add vanilla and caramels and stir until they are melted, about 4 minutes. You may have to put the pan over very low heat to get them fully melted.
  • Stir in oats and coconut.
  • Drop by heaping spoonfuls on wax paper. Allow to cool and set overnight.
