21 Days of Cookies 2019: Day 9
This recipe is adapted from one found on Allrecipes. These soft, rich sugar cookies are a bit like a snickerdoodle without the cinnamon. And that’s ok with me! You can tell how rich they’re going to be just from a glance at the recipe – 3 egg yolks! They are sooooo soft they just melt in your mouth. The holiday jimmies give them an extra-festive look to spruce up your holiday cookie platter.
They are a super quick drop cookie recipe. No fussing about chilling the dough or rolling it out. Just mix, scoop, and bake them off. You can be done in under an hour!
Consider replacing the vanilla extract with lemon or almond, to your preference!
Christmas Crackle Cookies
Ingredients
- 1 ¼ cups granulated white sugar
- 1 cup butter I prefer lightly salted
- 3 egg yolks room temperature
- 1 tsp pure vanilla extract
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp cream of tartar
- ¼ tsp salt
- ½ cup holiday colored jimmies
Instructions
- Preheat oven to 350 degrees.
- Prepare 3 cookie sheets by lightly coating with nonstick spray or lining with parchment paper.
- Cream together butter and sugar for 2-3 minutes until light and fluffy.
- Add egg yolks and vanilla, beating slowly. Stir to thoroughly combine.
- In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt.
- Add flour mixture to wet mixture and stir on low until no white remains.
- Stir in jimmies until evenly distributed throughout dough.
- Use a scoop or tablespoon to portion dough into 1-ounce balls. These do spread, so I can fit 9 to a half-sheet. Do not flatten the balls, they will spread on their own.
- Bake from 11-14 minutes, or whenever the edges start turning lightly brown.
